A Taste of Morocco
We invite you to try something new for dinner, tagine cooking. A tagine is a casserole dish used in North African cooking, most commonly Moroccan. Tagine dishes are slow-cooked in the oven at low temperatures, resulting in tender, flavorful meats and vegetables. The conical-shaped cover returns moisture to the bottom of the tagine, allowing the slow infusion of flavors throughout the dish.
Traditional recipes include chicken with preserved
lemons and green olives, kefta meatballs with tomato, lamb with raisins
and almonds, and fish with lemon, cilantro and olives. The unusual combination
of spices used in Moroccan cooking is unforgetably delicious.
Cooking Tagines
