Mediterranean cuisine is renowned for being delicious, healthy and diverse, using local ingredients and simple, old-world techniques. Offering a homemade meal to a guest or visitor is a long-lived tradition throughout the Middle East and has made the region famous for its unsurpassed hospitality.
We invite you to our cooking classes and a taste of the Middle Eastern experience. We welcome you into our home for an informal evening of traditional cuisine, cooking instruction and great conversation. The small classes will be 8-10 participants. Classes include instruction and recipes. A full meal with dessert is offered directly following the class. Whenever possible, the ingredients prepared in class will be purchased locally from farmers’ markets or natural food stores. The duration of the class with the meal is around 3 hours in length.

Registration
Register in person at Indigo Traders, 7881 SW Capitol Hwy, Portland, 503.780.2422. Registration is on a first-come, first-served basis. Typically, classes are held Thursday evenings or Sunday afternoons. This one-day class has available dates from January through March 2009. Private parties can be arranged. Gift certificates may be redeemed by visiting Indigo Traders to schedule a class.
In the event you must cancel your class reservation, please give us at least 7 days notice prior to the date of the class to receive a credit or refund. If you register 3 or more people for a class, a 2 week cancellation notice is required.
Classes may be canceled due to insufficient enrollment. Upon cancellation, we will contact you by phone or email. You will have the choice of either rescheduling another class or receiving a refund. Menu items may change, depending on availability of ingredients.

About the Instructor
Samir Naser, owner of Indigo Traders, was born and raised in Nablus, Palestine in a large family. He spent much of his childhood on his grandparent’s farm in a small village in the countryside. Samir enjoyed the almond, fig and olive trees abundant on the farm. Though a simple family, they enjoyed fresh fruits and vegetables each day, his grandmother’s fresh home made bread and easy afternoons under the trellis of grape vines. Samir’s mother and sisters are exceptional cooks, and Samir naturally took an interest in foods and cooking his native cuisine.
